Cava Group, Inc., the company behind the fast casual restaurant, is “a leading Mediterranean culinary brand that also provides premium fresh dips and spreads sold at Whole Foods and other markets.” The fast casual model allows customers to build their own bowls, beginning with a base of greens or grains, then adding dips and spreads, protein, and a multitude of vegetable toppings.

Although Brett Schulman, the Co-Founder and Chief Executive of Cava Group, Inc., confirmed that the new restaurant is not a franchise, he was unavailable for further details at the time of this article.

We can, however, expect fresh, “plant-based and protein-packed” food as well as Cava’s signature Mediterranean-inspired spices and flavors as varied as its roasted eggplant puree that is made with onion, garlic and fresh parsley, and harissa, the traditional spicy spread made from tomatoes and peppers.

Be sure to check back here for updates on Cava’s opening at 850 CA-1, right on the corner of Rosecrans Avenue and Pacific Coast Highway.
