Chicken and Waffles to be Found in South Coast Plaza’s Collage

Currently under construction, Bruxie, a fried chicken and waffle restaurant, appears to be set to join Collage Culinary Experience, a food court opening in the South Coast Plaza this summer.

“Great things to come in 2021,” Bruxie Costa Mesa posted onto Instagram late last year.

In a post sent out last month, Bruxie said “things were coming together at Collage.”

Bruxie features original chicken and waffle sandwiches along with other gourmet waffle and dessert options. Customers can choose from spicy tots and waffle fries and breakfast waffle sandwiches and chicken tenders are also available.

With locations in Las Vegas, Santa Monica, Chino Hills, Birch Street Promenade, Seoul, South Korea and more, Costa Mesa is next up for the growing restaurant.

Located in the South Coast Plaza at 3333 Bristol St., Bruxie will be among the “creme de la creme” in international and local cuisine, including casual, sit-down restaurants, full-service bars and artfully crafted coffees.

The South Coast Plaza is home to 250 luxury and contemporary boutiques and 30 restaurants with Collage Culinary Experience expected to be coming soon.
