The new restaurant, initially poised to break through Los Angeles before the pandemic, is expected to replace the former Paramount Coffee Project space in Downtown by late-Spring 2022, according to Eater LA. Founder and chef Chris Bianco expects to finally make his Los Angeles debut in May 2022. The 2,000 square-foot space will have about 40 seats and closely resemble Bianco’s Downtown Phoenix location. This will be the third official Pizzeria Bianco location, following the two sites in the Phoenix area.

The new location will have a similar menu to the original Arizona allocation, including a simple menu consisting of six pizzas, a few salads, two sandwiches, and a couple of small plates. The New York owner also expects to bring in an electric deck oven to do things like New York-style slices and other ready-to-eat dishes throughout the day. This is a significant accomplishment for the Arizona-based company, which opened in 1987.

“I have some unfinished business in Los Angeles, and I want to give everything I have,” Bianco tells Eater LA. “I’m a city kid. I love this space. I love that it’s in the city center. I see it as a respite, a city park, and I’m excited about it. I got a couple of key people coming already with me. I just won’t want to be vague.”
