In 2019, father-son team Ron and Ryan Ursey launched the first Roll-Em-Up Taquitos, inspired by Mama Karen’s beef taquitos, in Chino Hills, followed by a second location in Brea. Roll-Em-Up’s official website indicates a total of 25 locations “coming soon” across Southern California, including Ventura and Thousand Oaks.

Roll-Em-Up Taquitos offers deep-fried, crunchy corn and flour taquitos made with braised shredded prime beef, chicken, potato, cheese or avocado. Sauces include sour cream, house salsa, guac sauce, Roll Em Up Mild Sauce, and Lit Em Up Sauce; and toppings include cojita cheese, Hot Cheeto dust, homemade guac, and queso sauce. Additional delectable treats on its menu are elotes (Mexican street corn) and churro donuts.

San Bernardino County locals Elder and Lemus, who have over 20 years of entrepreneurial experience, plan to open over four locations by the end of 2022.
