Owner/ chef Jason Winters started the company in 2012 and served his sourdough pizzas at pop-up events. During the pandemic, he built a mobile pizza oven inside of a van called the Speak Cheezy. Winters and his team would set up in parking lots and driveways throughout Los Angeles. Now, the Long Beach native gets ready to open his first brick-and-mortar in his hometown sometime in 2022, according to Eater LA. The chef says this is one of the first sourdough pizza restaurants in Los Angeles.

The transition will bring a much larger space for Winters and his team. He tells Eater he plans on transitioning into a deck oven that can turn up to more than 900 degrees. The company will continue to use organic flours and dough “naturally fermented” for 100 to 120 hours. When the store does open, customers can still find Urban Pie’s mobile pizza delivery van for events and catering.

“For years, I have been looking at this space, thinking it would one day make the perfect pizzeria,” Winters said during his announcement on Instagram. “One day, I walked in to make an offer. It was the owner’s last day, she informed me. It was never listed. A number was on the window a couple of days later. It was kismet. This whole ride has been. It brings me much joy to open to the public @speak_cheezy in my home #longbeach. Serving my community.”
