The Fairmont Miramar Hotel & Bungalows is opening a new agave lounge in Santa Monica called Georgina’s, located at 101 Wilshire Blvd.

The new restaurant, named after the hotel founder’s wife, Georgina Jones, is expected to open in early 2022. Described as both a salon and gardened ocean terrace, Georgina’s will have a high tea service during the day. At night, customers can expect cocktail service and a champagne bar with a sushi menu from chef Masa Shimakawa of Soko. It’s an honorable dedication for the one who notoriously planted the 80-foot-tall fig tree that’s found across the hotel’s entrance.

Georgina Francis Sullivan Jones fell in love with the Pacific Coast in 1875, according to the hotel’s website. She and her husband, Santa Monica co-founder, John. P. Jones built a mansion at the hotel’s current location. There the duo would host intellectuals with Mark Twain and Susan B. Anthony. The hotel officially opened in 1921, making this new restaurant a possible centennial honor to her, but the pandemic likely delayed plans.

On top of the sushi dinners, Georgina’s will also serve small bites that make the dining experience much more casual. To elevate this light and relaxed environment, the restaurant will feature neutral and earthy tones that match the rest of the century-old hotel and other dining on-site dining destinations, such as The Bungalow, Dogtown Coffee, Lobby Lounge, and Fig Restaurant with Executive Chef Jason Prendergast.
