The quick-service eatery last week received the necessary approvals from the City of Los Angeles to begin building out a corner space in The Academy Tower, at 5200 Lankershim Blvd #160, into the new Chop Stop.

“We hit a snag with legal stuff that didn’t allow us to hit a summer opening, but we are back on track and anticipate a January opening,” Joey Gonzalez, the company’s vice president of operations, Tuesday tweeted to What Now Los Angeles.

“Let’s get to choppin’!”

Chop Stop, a build-your-own salad concept, sources locally-grown produce when possible, and offers its 40 ingredients “pre-chopped” so that “we’re able to assemble your meal quickly so you spend less time waiting for your food, and more time enjoying it.”

Salads can be ordered as a Chop (a typical salad), a Chopurrito (salad served over rice and beans), or a wrap.

“Think of Chop Stop as social networking for food,” according to the chain’s Facebook page.

“We bring together different fresh ingredients and flavors and combine them into a sum that is better tasting than its individual parts.”
