“Carles is the chef-owner behind the award-winning restaurant Fonda Lo Que Hay, which is in Panama City, Panama, and is currently ranked number 57 on Latin America’s 50 Best Restaurants list,” says Eater.

The incoming upscale eatery will feature a seafood-centric menu with raw preparation and heavy Panamanian influence. Specific details regarding Si! Mon’s offerings are forthcoming.

The redesigned space will seat more than 100 guests in the main dining room and outdoor patio.
