Ahead of the debut of his new location, Dominick Dibartolomeo tells What Now Los Angeles about exciting upgrades to the historic store and plans to “grow the brand"

On Monday, July 17, The Cheese Store of Beverly Hills will open at its new location, 9705-07 S Santa Monica Boulevard.

Though surprising, the move from 419 N. Beverly Boulevard isn’t at all random. The proprietor of the historic gourmet market, Dominick Dibartolomeo, has always had big plans in mind for the biz, including an expanded menu, craft beer, and an influx of cheese offerings. Read on to find out what the longtime employee-turned-shop-owner has up his sleeve:

WNLA: What inspired the move?

DD: The move to a bigger location has been a dream of mine since I took over ownership of The Cheese Store of Beverly Hills last year. I’ve worked at The Cheese Store for two decades and have so many amazing memories at the original location. There’s just no way we’d be able to offer all of the amazing things that we’ll be offering at the new Cheese Store of Beverly Hills based on the size and capacity limitations of the original store.

WNLA: What changes can we expect?

DD: The new store gives us the opportunity to serve the community in so many new ways. We’ll have an even wider selection of cheese and gourmet products from all over the world, and for the first time ever we’ll be offering an incredible takeaway menu of gourmet sandwiches, salads, sides, and other freshly prepared foods. 

I’m particularly proud to unveil a section of the store that’s exclusively dedicated to Domenico’s Foods, my fresh and imported Italian specialty foods brand that I launched at The Cheese Store shortly after I started working there. 

Customers will be able to purchase a wide variety of Domenico’s products on-site — fresh pastas, stuffed peppers, sauces, tapenades, pestos, and much more — while experiencing my culinary staff preparing hand-made, fresh pastas and other favorites in the store’s on-display mezzanine section. We’ll also be shipping products nationwide for the first time ever. 

And last but not least, in addition to carrying a highly curated selection of wines from all over the world, which we’re known for, the new location will also feature a wide variety of artisanal spirits and craft beers. 

WNLA: Do you have plans to expand throughout LA?

DD: We’re definitely looking to grow the brand, but our immediate efforts will be placed on the new location.
