The recently-closed Chronic Taco outpost at 3870 East Ocean Blvd in Long Beach will soon become a branch of Bruxie, the popular waffle sandwich chain founded in 2010 by Dean Simon and Kelly Mullarney.

While an opening date is not yet known, alterations to the building’s facade — which formerly donned a Top Gun-inspired mural — are well underway. It’s unclear why Chronic Tacos LBC shuttered its doors.
The incoming Bruxie arrives fresh on the heels of its El Segundo sister store that debuted earlier this summer. This will be the brand’s eighth location, with most of its stores landing in SoCal, save its two Georgia branches — one of which is still in the works.
Bruxie CEO Scott Grinstead says the new Long Beach Bruxie will be company-owned, though he emphasizes that all Bruxies, company or franchise-owned, operate at the same high standard.
Bruxie is well-known for its enticing spin on the patterned breakfast classic. Instead of merely dolloping on two scoops of butter and some syrup, the eatery opts to fold them in half and stuff them with savory goodness like fried chicken and pastrami with Cider Slaw.
The menu also offers sweet waffles; loaded waffle fries or tots; big, filling salads featuring crispy or grilled chicken; an array of sandwiches ranging from NY deli style to artisanal; chicken and waffle plates; and custards and shakes.
