Renowned chef David Schlosser, known for Shibumi (DTLA) and Imari (Brentwood), is gearing up to launch an exciting new concept called Kushiba at 1498 W Sunset Boulevard in ever-changing Echo Park.

According to a recently-filed ABC application, Schlosser will present the project alongside Simon Xi, the esteemed culinary figure and co-founder of Saka Mai, Bar Moga, Shibumi, and Curry Bo. 

Schlosser is highly regarded for his exceptional skills in traditional Japanese cuisine — even being recently named a Japanese Cuisine Goodwill Ambassador — and both of his LA eateries have garnered critical acclaim for their commitment to authenticity and innovation. Similarly, Xi, with his diverse experience in managing successful establishments, brings a wealth of knowledge and a keen eye for operational excellence. His previous ventures have consistently earned praise for their distinctive concepts and elevated dining experiences. 

Per its website, Shibumi serves a unique and rare selection of beverages paired with seasonal offerings…[made from the] highest quality local, organic, and sustainable ingredients atop a 400-year-old cypress counter. On the other hand, Imari focuses on the Japanese cuisine, traditions, and skills known as Washoku – “a celebrated and UNESCO-recognized format often seen in Japanese culture around New Year celebrations,” per Eater. 

When it comes to Kushiba, Schlosser and Xi are undoubtedly poised to create a restaurant that pushes boundaries and delivers a memorable experience. Be sure to stay tuned for more updates on the menu, opening date, and other exciting details as they become available.
