It Appears Two Culinary Vets May Soon Open a New Concept

Matthew Kenney Cuisine’s Director of Culinary Operations Justin Hilbert and COO Matt Bronfeld recently filed an ABC application under 19JHMB, LLC for the space at 1200 E. 5th Street, formerly home to Chef Hiroo Nagahara’s Asian street-food experiment, The Chairman.

In addition to contacting Hilbert for comment, What Now Los Angeles reached out to Chef Matthew Kenney to find out if the incoming concept is an MKC-related project. Neither Hilbert nor Kenney opted to respond. 

Matthew Kenney Cuisine is responsible for a slew of plant-based restaurants around the world, including varying iterations in Los Angeles, New York, Orange County, Rhode Island, Costa Rica, Dubai, Buenos Aires, and more. 

What’s more, both Justin Hilbert and Matt Bronfeld are hospitality industry vets, bringing with them decades of experience and passion. Hilbert has spent the past 20 years working in top kitchens such as Maude, Mugaritz, and wd-50, while Bronfeld has over 14 years of experience working in multi-unit management, event production, bartending, and restaurant operations.

While not much is known about what’s to come, one thing remains clear: There will be an unmatched level of care and consideration put forth for this incoming project.
