The new 2,700-square-foot ice cream shop will likely move into the former home of The Green Chateau, an indoor playground situated at the northwest corner of the Plaza De Oro Shopping Center. Although several attempts to confirm this with any representatives from the company have fallen short, an updated marketing brochure from Loopnet confirms that Nick’s Ice Cream will open a location sometime this year. If this is the company’s first brick-and-mortar, it will be a massive accomplishment for founder Niclas “Nick” Luthman.

The owner was diagnosed as a pre-diabetic in 2014, forcing him to change his diet and lifestyle. Luthman quickly learned about nutrition and started following a strict low-carb, anti-inflammatory diet. It didn’t take long for him to miss all the foods he once loved. As a result, the mechanical engineer launched Nick’s Ice Cream in 2016, intending to create tasty no-sugar-added treats. The company now sells pints of its delicious ice creams in different stores across the country.

Some of the company’s popular ice cream flavors include campfire s’mores, coffee caramel, and Swedish cookie dough. Earlier this year, Nick’s Ice Cream partnered with Russian-German DJ Zedd for the company’s first-ever flavor co-creation: chilly mango. On top of the delicious ice cream, Nick’s Ice Cream also offers keto protein bars, nut bars, ice cream sandwiches, and other delicious snacks. Can’t decide which flavors to choose? Nick’s Ice Cream also features bundles, including “The Kollosal Bundle,” with 29 pints of ice cream.
