According to a report from Eater LA, Kalb plans to use the same dough and sauce recipes he developed for his Jemma Hollywood restaurant. The menu is not yet finalized, but he’ll likely serve personal pies and stacked sandwiches with schiacciata-style bread. Jemma’s Hollywood outpost features pies with creative toppings, pasta, antipasto, heroes, salads and meat and fish dishes.
Kalb told Eater LA that the restaurant should be open within a few weeks since the equipment Roca left behind is practically brand new. Due to limited space, the new location will be more focused on takeout and delivery. Hours will be 11 a.m. to 8:30 p.m. daily.
In addition to the Pacific Palisades and Hollywood Jemma locations, Kalb also opened Jemma di Mare in Brentwood earlier this year, and also owns Ospi and Jame Enoteca. He operates the Memento Mori Hospitality with his wife, Melissa.
