Japonica appears to be working on a new location inside the Hyatt Regency Los Angeles International Airport, according to a recent liquor license application. The “primary owner” listed on the application is Sima International, Inc., Japonica’s parent company.

Helmed by sake sommelier and chef Takashi Sada, Japonica’s outposts in Hermosa Beach, Redondo Beach and El Segundo each offer a variety of nigiri, sashimi, classic and specialty rolls, ramen, appetizers, shareable plates, sake and Japanese craft beer.

“It’s Taka’s father who taught him that sake exists for food while educating him on the fine points of pairing…Taka began his culinary career and in 2002, with his life partner Chika, opened Japonica in Redondo Beach! Their journey in originating authentic Japanese Izakaya-Sushi advances daily and with the addition of discovering smoked methods to enhance the umami in ingredients, the possibilities are endless,” says the business’ website

Japonica also makes a unique smoked soy sauce in-house, which adds a subtle umami flavor that complements their sushi and dishes rather than overpowering them.  

An opening date for the new restaurant has not been announced.
